TEXAS BARBEQUE

The feeds served by the Gang consist of barbecue at its best, cooked long hours in custom built pits, along with pinto beans, slaw, pickles, onioins, bread, and iced tea. The feeds, whether 200 or 30,000 people, are served the same. The advance party arrives at the feed site 24 hours ahead of serving time with the 48-foot van which carries all the utensils, serving tables, tools, 250-gallon bean pots along with the many other items necessary to put on the feed.

While the Gang is famous for it's barbeque, menus are varied to complement the event. Whether a feed calls for a country style breakfast, steak dinner, shrimp boil or a good old fashion hamburger, the Gang has done it.

The Odessa Chuck Wagon Gang uses only the finest products available for all the feeds. Prices for the meals are determined by the menu, number of plates and distance traveled to a feed.

FEED LINES

Eight to ten members make up a serving line and the size of the crowd determines the number of lines. A line can serve up to 1,000 people per hour. The iced tea detail, sometimes served by the barrel, is located close to the end of the serving lines and is made up of four to eight members.
